Skinny Mixed Berry Margs
The perfect evening cocktail for Cinco De Mayo. Most margaritas are loaded with added sugars. This recipe uses a berry blended juice that contains minimal added sugars when compared to a normal margarita!
Ingredients
1 - 2 oz. tequila
1/2 - 1 oz. fresh lime juice
4 - 6 tbsp. V8 berry blend
Ice
Instructions
Salt or sugar (stevia) the outer rim of the glasses that you are using and fill with ice. In a small cocktail shaker, mix together the tequila, lime juice, and V8 berry juice. Shake for 20 - 30 seconds, pour over ice and finish it off with more berry blended juice. Add slices of lime and fresh fruit for garnish!
Homemade Churros
A cinnamon and sugar dessert is always a crowd favorite! These fresh homemade churros were amazing! I am officially obsessed.
Ingredients
Oil
1 cup water
3 tbsp. unsalted butter
1 1/2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. vanilla extract
1 cup all purpose flour
1 egg
Cinnamon and sugar for topping
Instructions
Fill a large pan (we use our Dutch oven) with 1-2" deep of oil. Heat oil to 360-365 degrees.
In a separate sauce pan, combine butter, water, sugar and salt over medium heat. Stir frequently until butter is melted and mixture comes to a boil.
Once the mixture is boiling, add the vanilla extract and flour. Reduce heat to low. Stir until the mixture forms a ball. Remove from heat and let cool for 5-10 minutes.
After cooling, add the egg and stir until combined. Use a spatula or wooden spoon to stir until the mixture forms a gluey mashed potato form.
Transfer the dough to a piping bag fitted with a star tip.
Carefully pipe the dough into the oil (keep the tip close to the oil to prevent splashing) and use kitchen scissors to cut the dough.
Only fry 2-3 churros at a time. Fry for 90 seconds on one side and flip the churro and cook for 90 seconds on the other side. They should be golden brown when removed from oil. Place onto a paper towel lined plate and allow to cool for 1 minute.
Combine sugar and cinnamon and place the cooled churro into the mixture, coating the outside. Transfer to a different plate.
Continue frying churros and making sure the oil temp remains at 360-365 degrees. Enjoy!
